Pomegranate Champagne Cocktail
fresh pomegranate arils
Champagne or Prosecco; chilled
Pomegranate juice (Pom)
Place some pomegranate arils in champagne flute fill with the sparkling wine, dividing it evenly among the flutes, pour in a 3-4 Tbls. pomegranate juice, serve immediately.
Pomegranate Cheese Ball
4 ounces sharp white cheddar cheese, cut into cubes
8 ounces cream cheese
4 ounces blue cheese
2 Tbls. diced green onion
3 ounces dried cranberries, figs or raisons
¼ cup walnuts
Pomegranate arils
Chopped parsley
Place cheddar cheese in a food processor, pulse until coarsely chopped, and add remaining ingredients until well combined. Lay out a large sheet of plastic wrap and place cheese mixture on top, roll into a ball. Refrigerate, then roll into pomegranate seeds and place a few pieces of parsley around the ball for color. Serve at room temperature. Serve with baguette slices or crackers.
Sausage Stars with Pesto Aioli
1 sheet of puff pasty; cut into 2 “ star shapes and egg washed
bake frozen at 400 for about 6-7 minutes
6 Italian Sausages; cooked and sliced
Roasted red pepper
½ cup mayo
2 Tbls. pesto (or more to taste)
Skewer (with crafted pick) sausage, pepper and top with puff pastry star.
Festive Veggies in a Glass Vase
Grape tomatoes
Green pepper or sugar snap peas
Layer in vessel for a festive look; serve with hummus or ranch dip
Blue cheese stuffed rollups
4 ounces cream cheese
2 green onions coarsely chopped
1 clove garlic, minced
1 tablespoon balsamic vinegar
3/4 cup crumbled blue cheese
2 tablespoons mayonnaise
freshly ground pepper to taste
Roast Beef slices-good quality lunchmeat
Fresh figs; sliced
Mix dip ingredients, place on roast beef, roll and skewer with fig wedge.
Chocolate Ganache Brownies with Pistachios and gold stars:
Favorite brownie recipe or mix
¾ cup whipping cream
4 oz. bittersweet chocolate
Bring cream to a boil, remove from heat and whisk in chopped chocolate. Pour glaze over brownies. Decorate with gold edible stars from Michaels (Wilton edible accents) and sprinkle chopped pistachios around edges; using a knife to define a clean line. Refrigerate.
