Aperol Spritz

2 ounces Prosecco
2 ounces Aperol
splash of club soda
2 orange slices

Fill a large wine glass with ice. Add 2 ounces of prosecco, followed by 2 ounces of Aperol in each glass. Pour in a splash of soda water. Garnish each drink with an orange slice.

*For a twist on a classic I added a splash of pineapple juice and a pineapple wedge.  Used long Zita noodle for a straw “stroodle”-purchased on Amazon

Easy Appetizers-3 ingredients

1)Yellow and red watermelon; cut in squares

Bread cheese or haloumi cheese cut in squares

Sprouts; top watermelon with sprouts, top with cheese and skewer with a decorative pick

2) Truffle crostini with watermelon radish- spread baguette slice with truffle butter (if you can’t find regular butter is fine, top with sliced watermelon radish

3) Fresh fig with cambazola cheese and prosciutto; quarter fig, dollop of cheese, wrap in a narrow slice of prosciutto

Chicken and Tofu Skewers with Peanut Sauce

Chicken breast pounded flat slice into strips; marinate overnight

Extra firm tofu; press liquid out for about 30 minutes; slice and marinate overnight

*I used Trader Joes SOYAKI marinade

Quick Peanut Sauce

½ cup peanut butter

1 ½ Tbls. soy sauce

2 Tbls. sesame oil

1 tsp. lime juice

½ Tbls. honey

Dash garlic powder

Siracha to taste

4-6 Tbls. water to thin out

Process in the food processor, refrigerate until serving.

Strawberries Stuffed with Mascarpone Cheese

8 ounces of mascarpone cheese (or cream cheese for a substitution), room temperature
1 tsps. lemon juice
½ tsps. vanilla
2½ Tbls. powdered sugar
28 strawberries
chocolate shavings for garnish or seasonal sprinkles

Mix the first four ingredients together in a bowl until well blended. With a sharp paring knife, cut off the leafy bottoms of the strawberries to create a flat base. Cut a deep cross in the tops of the strawberries, down through the tip but not completely through to the bottom. Place the cheese mixture into a piping bag with a star tip (I used a 4B tip but most any star tip will work).  If you don’t have a piping bag, you can use a quart sized zip lock and just cut off a corner so the tip fits snugly through that.  Pipe the cheese mixture into the strawberries.  With a coarse microplane or cheese grater, grate chocolate over the cheese stuffed strawberries.  Place the strawberries on a serving platter and refrigerate until ready to serve. Makes about 20 stuffed strawberries.
